Getting Started

So many folks are on the path towards better health by eliminating gluten and dairy from their diets.

So many friends confess that embarking on this journey is downright frightening.

Agreed, sister.

When we started, we didn't know where to turn for guidance. We got some information from books and websites aimed at Celiacs, but all in all, it was a rough road moving along to the allergy-freiendly superhighway we're cruising along on now.

At times it felt like we were drifting about aimlessly in outerspace. Alone. You should have seen me in the early days at the grocery store reading the back of every package. Boy howdy, did those trips in the first year take a long time.

We found recipes—but they were complicated—certainly not for a cook who has three little monkeys running around her feet. If the recipe says thirty minutes to prepare, it would take this cook an hour and thirty minutes to make it.

The recipes often had another drawback, they were expensive, requiring items that when feeding a family of five would break the bank every time. And don't even get me started on all of those gluten-free flours. Heavens! We've purchased the whole bunch of required gluten-free flours on at least three separate occasions. Spending $100 at a time. Not surprisingly, those flours sat in the back of the refrigerator for the next year until they hit their expiration dates and we would have to toss them in the trash. I'm not doing that again.

This time around I have found two flours that work nicely together and I'm buying those only. And they are inexpensive. They don't break the bank. Thank heavens I can now eat a banana muffin that isn't valued in the hundreds of dollars.

Have no fear. If a woman in my shoes can do this, you can do this too!

I'm on a tight budget. Spending too much in the wrong places means that we can't spend in the right places, like safety items for the automobile or traveling across the country to grams and gramps.

In our years of gluten-free, dairy-free and recently corn-fee existence, we tried countless brands and products. Some have been blow-your-mind delicious, but too pricey. Others have been just the opposite. Quite inexpensive but a little too much like cardboard for my liking.

There are so many gluten-free products popping up on the shelves these days. So much to choose from.
